M. Hostomme, "Tradition" Brut - a very harmonious, balanced and pleasant champagne made from three grape varieties grown in organic vineyards. Pinot Noir adds wine structure and length, Pinot Meunier brings fruit tones and freshness, and Chardonnay gives the cuvée sophistication and elegance. Fermentation of wort with natural yeast cultures takes place in stainless steel tanks with a volume of 2500 liters for 10-12 days. After a natural de-burbage, wine rests until spring, while malolactic fermentation naturally proceeds. Every six weeks there is a stuffing - the wine is drained from the sediment into a new tank, during which oxygen is saturated. In May, assembly is carried out, easy filtration and wine is bottled. Tradition Brut is aged on the lees in bottles for at least two years. This cuvée, offering wealth, sophistication, pleasantness and nourishment, demonstrates an unbeatable price-quality ratio. Chilled grapes are pressed and placed in large stainless steel tanks for fermentation, after which the champagne is aged for at least 3 years on the lees. "Origine" Blanc de Blanc Grand Cru is perfect as an aperitif, as well as in combination with fish, seafood, light meals and fruits.
