This blend predominantly features Mencía, complemented by Garnacha and Sousón. The grapes are hand-harvested from vines averaging 60 years in age, cultivated on the precipitous slopes characteristic of Ribeira Sacra. Fermentation occurs with native yeasts in stainless steel tanks, followed by a maceration period of 15-20 days to extract optimal color and flavor. The wine is then stabilized and bottled without oak aging, preserving its fresh and aromatic profile.
