Viberti Giovanni, a family-owned winery established in 1923, is renowned for its dedication to traditional Piedmontese winemaking. The Pubblicano Dogliani DOCG is crafted from 100% Dolcetto grapes cultivated in the Valdibà hills of Dogliani, an area celebrated for producing high-quality Dolcetto wines since 1593. The vineyards’ calcareous clay and limestone soils, combined with their altitude, contribute to the wine’s lively acidity and fresh character. After manual harvesting, the grapes undergo fermentation in stainless steel tanks to preserve their aromatic purity. The wine is then aged for 10 months in a combination of steel and cement tanks before being lightly filtered and bottled.
