Product description

Vaucher Père & Fils, a venerable Burgundy négociant established in 1782, has a long-standing tradition of producing wines that reflect the distinctive terroirs of the region. Their Chablis exemplifies this commitment, capturing the essence of its northern Burgundy origins. The winemaking process involves manual harvesting, gentle pneumatic pressing, and fermentation in temperature-controlled stainless steel vats to preserve the wine’s fresh and mineral character. After approximately six months of maturation, the wine is bottled, resulting in a Chablis that is both vibrant and refined.

Notes of lime-flower, mint, and acacia occur frequently, as do hints of licorice and freshly-cut hay. The attack is intense, leading to a long and likeable persistence that culminates in a smooth and serene finish. Very dry and impeccably delicate.

Food Pairing An excellent aperitif, this Chablis also pairs beautifully with grilled or poached fish. It complements asparagus, which is often challenging to match, and harmonizes with exotic cuisine, including curries, tandoori dishes, and sushi.
