M. Hostomme, “Tradition” Brut – a very harmonious, balanced and pleasant champagne made from three grape varieties grown in organic vineyards. Pinot Noir adds wine structure and length, Pinot Meunier brings fruit tones and freshness, and Chardonnay gives the cuvée sophistication and elegance. Fermentation of wort with natural yeast cultures takes place in stainless steel tanks with a volume of 2500 liters for 10-12 days. After a natural de-burbage, wine rests until spring, while malolactic fermentation naturally proceeds. Every six weeks there is a stuffing – the wine is drained from the sediment into a new tank, during which oxygen is saturated. In May, assembly is carried out, easy filtration and wine is bottled. M. Hostomme is one of the oldest winemaking estates in Champagne, with records dating back to the 16th century. In the late 19th century, Paul Hostomme transitioned entirely to viticulture, becoming a key figure in the fight against phylloxera. By the 1930s, Marcel Hostomme released the first bottles under the "M. Hostomme" brand. Today, Laurent Hostomme and his wife Christel continue the family's legacy, producing elegant wines from Chardonnay, Pinot Meunier, and Pinot Noir grapes, with an annual output of approximately 100,000 bottles.
